Squash are taking over my fridge!

Any recipes for squash? I keep getting more and more each week in my bag and I always just turn to sauteing them. Creative suggestions?

  1. I once made squash bread (a sweet quick bread similar to zucchini bread). It turned out good, and I used the recipe below but I think I made some of the changes suggested in the comments (applesauce instead of oil, cut back on the sugar) but I can't tell you the exact changes I made. One commenter added pecans and almonds which sounds good. So sorry to not have an exact tried and true recipe, but it's at least a suggestion to use them a different way!

    oh also you can shred them and freeze for later, and add to spaghetti sauce for some more substance and nutrition and texture.

  2. I love a good squash pizza. It's super easy and you can just throw them on top with any other random veggies. I also love a good bit of goat's cheese on top.
